Over Baked Chimichangas!

Happy Hump Day, Lovelies!!
Today I am prepared to share with you my most favorite recipe I have created (or found on Pinterest, same thing), Oven Baked Chimichangas! It is the Hubby's absolute favorite. So much so that he refers to them as "delicious chimis" and brags about them to his friends. For the most part they are pretty healthy, semi-simple but most of all, they really are amazeballs.

First, brown the meat (ground turkey, beef or chicken is fine). I use ground turkey, 'cuz I like it most.
While your meat is browning, chop the tomatoes, cilantro and green onion.
Also, open the can of green chilis
Once the meat is browned, add in a packet of taco seasoning and water...also add some cummin and oregano, and if you're like us, add some red paper flakes to add a little heat! Simmer until most of the water has evaporated, then add the tomatoes, cilantro, green onions, and chilis.
Simmer until you feel all of the flavors have combined (and the rest of the water has evaporated). About 5 minutes.
Let the meat mixture cool for 5 minutes with no heat. Then make sure you have this:

After the cooling period, add sour green and cheese and mix well.
Lay burrito sized flour tortillas on wax paper and rub melted butter on both sides, and add a generous portion of the meat mix.
Fold the tortilla (almost) like an envelope so that they look like this:
Make sure they are not touching! Bake at 450 degrees for 20 to 25 minutes. When they are a crispy brown, add cheese to the top of each and bake until cheese is melted.

Let cool for 10 minutes or so. Serve with salsa, sour green, hot sauce, salsa, guacamole, etc!

Ingredients:
  • 1-½ pound ground turkey (chicken or beef)
  • 1 package taco seasoning (1.25 Oz)
  • 1-¼ cup water
  • 1 teaspoon ground cumin
  • 2 teaspoons chopped fresh oregano
  • 2 tablespoons chopped fresh cilantro
  • 1 can fire-roasted green chiles (7 oz.)
  • ½ cups diced fresh tomatoes
  • 2 chopped green onions
  • ½ cups low fat sour cream
  • ½ cups shredded cheddar cheese
  • 4 tablespoons melted butter
  • 6 flour tortillas (burrito sized/large)
  • ½ cups shredded cheddar cheese (to melt on top)
  • GARNISH: tomatoes, lettuce, cheese, guacamole, salsa, sour cream

    How to:
    Preheat oven to 450 degrees. Saute poultry until cooked through and starting to brown. Add taco seasoning and stir. Add water and stir. Over med – low heat cook until liquid has reduced 2/3.

    Add cumin, oregano, cilantro, chiles, tomatoes and green onions. Simmer until the rest of the liquid has evaporated. Remove from heat and let cool 5 minutes. Stir in sour cream and 1/2 cup Cheddar cheese.

    Lay tortillas on wax paper and brush both sides with the melted butter. Spoon 1/6 th of filling into center of tortilla and fold like an envelope.

    Put tortillas, seam-side down on a non-stick sheet pan. Spaced so they DO NOT touch. Bake 20 -25 minutes or until golden and crisp. Sprinkle with cheese and return to oven to melt. Serve with garnishes.
