One Skillet Dinner You Must Try

I mentioned this dinner in my last meal planning post and if we're being honest, I haven't stopped thinking about it. This sausage and kale skillet is TO. DIE. FOR. Not only is it full of flavor but it's so easy to make--it's perfect for hectic weeknights. There are very few ingredients, which means this fits nicely into a girl-on-a-budget lifestyle. With so few ingredients, I was skeptical if this dish would have very much flavor, but it does not disappoint, thanks to the Italian sausage!

Approximate cost per serving: $1.51 (orrrrr $6.02 if you eat the entire thing because it's that good...not that I did that or anything).

Sausage and Kale Skillet (original recipe from Budget Bytes)
Ingredients
  • 1 package Italian sausage
  • Two handfuls kale 
  • 1 (15 oz.) can chickpeas 
  • 1 jar marinara sauce 
  • 1 cup shredded mozzarella 
Instructions
1. Cook sausage in skillet over medium heat until fully brown. Break the sausage up into pieces as it cooks. It's okay if it sticks to the bottom of the skillet a little as it cooks.
2. Once the sausage is done cooking, add the kale. Stir it into the sausage and continue to cook until it is fully wilted (this happens within a few minutes).
3. Drain and rinse the chickpeas. Add the chickpeas to the skillet and stir to combine. Pour the marinara sauce over the skillet and let it warm, then top with the shredded cheese. Place a lid on the skillet and let it simmer until the cheese is melted (about 5-10 minutes).

Serve with garlic bread. 

See how easy that is? I think my total prep and cook time was 20 minutes.
